Cucumber Citrus Salad


“Cool as a cucumber….”
Cucumbers are so refreshing! Cucumber salads are fun to make and can be flavored to add to your entree or to eat alone.  I had lots of oranges and wanted to make a sweet cucumber salad.  I added some thinly sliced almonds and celery to give it some crunch.  I hope you will enjoy this salad!

Cucumber Citrus Salad

Ingredients

  • 1 - 2 cucumbers, sliced in half moons (you need about 2 cups)
  • 1 -2 oranges, peeled, sliced into sections
  • 2 - 3 stalks celery, sliced and diced thinly
  • 1/4 to 1/2 cup thinly sliced almonds (add as much or few as you wish)
  • 1 tablespoon sugar
  • 1/3 cup white vinegar
  • 1 tsp. tarragon
  • salt and pepper

Instructions

  1. In a bowl put sliced cucumbers, celery, and orange sections
  2. In a small bowl, mix the sugar, vinegar, tarragon to make the dressing
  3. Drizzle the dressing over the cucumber salad
  4. Salt and pepper to taste
  5. Sprinkle the thinly sliced almonds over the salad (I used peanuts once and it was also good)
  6. Enjoy!

    I just have a question regarding availability. I have logged on and tried to participate for six weeks now but it is always full by 12:30. Are you ever going to add more to the woodriver ne drop site so others can join in as well I have talked to 3 other people in grandisland who are having the same problem as me.
