Butternut squash is one of my favorite vegetables. There are so many ways to use it, savory or sweet. This is a fancy looking but easy way that uses puff pastry shells from the store. Add you favorite salad and you have a wonderful meal.

Wrap pinwheel recipes are quick and fun to make. You can include your family in the assembly of these yummy pinwheels! I make them when I know I have lots of family and visitors coming. They are easy to eat and don’t require a lot of work. You can wrap a variety of ingredients to make great pinwheel appetizers. They are also a quick addition to a lunchtime salad or just to eat for lunch. I like to use the spinach or herb wraps to make these.

I love using hummus in wraps! Spreading hummus on the spinach or herb wraps makes a tasty base for any add ons. You can add turkey or ham slices or just make them veggie. I like to spread on the hummus and add chopped black olives. You can be inventive and add your own ingredients to these! Enjoy!

Now that school has started I’m back to making lunches for the kids because let’s face it cafeteria food is…well cafeteria food! My children have never been picky eaters because we’ve never dumbed down their food. What we eat they eat! This ol’ gal doesn’t do multiple meals. Because of that our kids are much more open to trying things most of their contemporaries won’t touch and quite honestly it makes my life much easier. I do have to be honest with you though. Our food philosophy has created borderline food snobs, but hey, worse things could happen ya know?!

We’ve had an amazing couple of weeks with Hatch Green Chiles available, and we’ve been in chile heaven here. The majority of the chiles will be Enchilada Sauce, but we’ve been using them in other applications, too, like breakfast burritos, stews, and these patty melts.

The summer days of my childhood fell into a pretty consistent routine. Mornings were spent splashing and playing in the pool or running through sprinklers attempting to cool off in the hot Las Vegas sun. Each afternoon the heat and bright rays would drive my siblings and me into the house for afternoon siestas. Of course, that didn’t last too long and soon the cool water called to us and we ventured back out to the pool playing until well past dark. Our large pool was often crawling with neighbors, friends, and extended family. And most evenings while we enjoyed the water, my father fired up the grill.
