Cucumber Citrus Salad

“Cool as a cucumber….”
Cucumbers are so refreshing! Cucumber salads are fun to make and can be flavored to add to your entree or to eat alone.  I had lots of oranges and wanted to make a sweet cucumber salad.  I added some thinly sliced almonds and celery to give it some crunch.  I hope you will enjoy this salad! Citrus Chicken Fajita Marinade

I love the bright and fresh citrus that we get in the wintertime from Bountiful Baskets but sometimes my counter fills up faster than I get them used. I was inspired to use the citrus to make a flavorful marinade for the fajitas on my meal plan for this week.  The resulting chicken is moist and flavorful and it comes together super easily. (more…)

Tangy Cran-Orange Coconut Chicken

When I was a small child, I would awake Christmas Eve morning to the smells of cinnamon, cloves, vanilla, oranges and cranberries that wafted around the clinking sounds of Grandma in the kitchen preparing everyone’s favorite dishes for our dinner later that day.  Grandpa would be in the his chair humming Christmas Carols as he put on his shoes.  I could see the glow of the Christmas tree lights dancing across the ceiling from where I lay snug in my bed, cozy and warm under the heavy handmade quilt.  (more…)

Citrus Rosemary Salt Blend

Prep Time: 5 minutes

Citrus Rosemary Salt Blend

I love having special spice blends in my pantry so it is easy to whip up meals. During the winter, when citrus is plentiful, I zest the fruits and let it dry on a napkin then store it in a jar. I used that zest in this blend along with Rosemary that I received in an Italian Veggie Add-on. This blend is wonderful fragrant and tasty on poultry or roasted veggies.

Ingredients

  • 1/4 C Sea Salt
  • 1 T Orange Zest
  • 1 T Rosemary

Instructions

  1. Put all of the ingredients in a food processor and pulse until well blended. You don't want to overpulvarize the salt.
