Steamed Artichokes

Artichokes.  Yummy with a butter and lemon dip or ranch dressing!  I love eating artichokes, but the first few times I tried to make them, I did not succeed.  I researched and learned how to cut and clean the artichoke before cooking.  The most important thing about preparing artichokes is to wash, clean, cut them and make sure they are ready to cook.  There are many videos and instruction pages online that show specifically how to cut artichokes.  Remove the outer leaves and trim.  Make sure to clean out the choke in the center.  Then, go ahead and make an elegant and tasty artichoke meal!

Steamed Artichokes

Ingredients

  • 2-3 artichokes, washed
  • salt / pepper to taste
  • black olives, sliced
  • 1 tsp. oregano
  • 1 tsp. garlic powder
  • lemon juice
  • water
  • Ranch dressing or melted butter with lemon dressing

Instructions

  1. First, clean the artichokes
  2. cut outer leaves with scissors and trim off sharp ends
  3. cut off bottom and top
  4. Slice down the center of the artichoke to open
  5. Once opened, clean out the fuzzy choke section completely
  6. Dip in lemon juice to keep color
  7. Put pot of water on stove to boil
  8. Add artichoke halves
  9. Boil for 8 - 10 minutes or until fork tender
  10. Drain and add chopped olives and spices to center of artichoke
  11. Serve with ranch dressing or make a melted butter with lemon dip
  12. Enjoy!

  2. After reading this cooking method on line, I no longer boil artichokes. Best method for ease and speed of cooking and maintenance of full flavor!!! Cut stem even with bottom of artichoke. Cut top off, trim sharp points off rest of leaves. Pull open slightly with fingers, pour in some vinegar set in glass bowl, add a little water around base. Wrap bowl with plastic grocery bag, cook in microwave for 6 1/2 min. Dump water, turn upside down, rewrap and let cool. Yum!

  3. I usually just boil whole, but will give this a try. For the dipping sauce, I combine mayo with a little Dijon mustard and some garlic salt and lemon pepper.

  4. Thanks Debbie, that was awesome information on how to prepare Artichokes. I grew up with my Mom making artichokes, but we just boiled the whole Artichoke in water till fork tender. This is such a better way to enjoy the Artichoke after it has been cooked. Thanks again for the amazing tips and dipping sauce recipes to go with it!!

    Thanks for the recipe and the how to. I have never cooked artichokes until I’d gotten them with the basket. The other two times I have cooked them I had followed online guidelines. Your method looks simpler. Maybe I will enjoy getting artichokes in the future.
