Citrus Asparagus

Asparagus has been a prized delicacy for over 2,000 years.   No wonder I love it so much!  Asparagus is also loaded with nutrients and antioxidants.   You can roast, grill, or fry asparagus.  My favorite is to combine it with whatever citrus I have available.  Feel free to substitute the oranges with Clementine cuties, or lemons.  Citrus gives a lovely flavor to the already great taste of asparagus.

Citrus Asparagus

Ingredients

  • 2 small Clementine cuties, or oranges, or lemons
  • olive oil
  • 2 big bunches of asparagus
  • 2 cloves of garlic, thinly sliced or diced
  • 2 teaspoons tarragon

Instructions

  1. You can preheat the oven to 400 degrees (or you can microwave for 4 minutes)
  2. Peel and slice the oranges
  3. Wash and break off the asparagus woody stems
  4. Place spears in a glass baking dish
  5. Drizzle with olive oil
  6. Spread the garlic and tarragon on top
  7. Squeeze some of the orange slices over the asparagus
  8. Add the rest of the orange slices to the dish
  9. Bake for 15 minutes or microwave for 4 minutes
  10. Serve and enjoy!
