Want to try something a little different with those pomegranates? How about a reduction sauce, it’s quick, easy and adds a wonderful flavor for meats without the heaviness of gravy.
2 TBS. diced shallot
2TBS. unsalted butter
2cp. juice
1TBS. sugar
1TBS. balsamic vinegar
Saute’ shallots in butter until almost translucent. Add pomegranate juice, sugar, and vinegar. Stir. Bring to a boil stirring occassionally. Continue to boil until juice is reduced by half. Remove from heat, stir and allow to rest 1 minute. Drizzle over pork or beef and serve with side dishes of your choice. Enjoy!
