This Dressing has a solid kick of lemon flavor without making you pucker too much! It’s the perfect thing to drizzle on a salad with fruit included or a Kale salad! It’s nice and creamy without containing dairy. It also works wonderfully as a sauce for chicken or fish, or a marinade! For marinading I would add more rosemary and black pepper.

This dressing is fabulous for a Kale Salad! The lemon will stand up to anything.
Ingredients
- Juice of 2 Lemons (approx 1/4 C)
- Zest of 1 Lemon
- 1/4 C Extra Virgin Olive Oil
- 3 TBSP Mayonaise
- 1 tsp Fresh Rosemary leaves
- Pinch fresh ground pepper
Instructions
- Zest the Lemon
- Cut Lemons in half and squeeze over your hand catching the seeds
- Mince Rosemary as finely as possible
- Add Olive Oil
- Add Mayonaise
- Add Pepper
- Beat together with a fork until smooth
