Refreshing Cucumber Salad

This is my daughter’s favorite salad, she literally licks the plate clean when I make it.  I love it because it is crisp and refreshing and comes together easily.  The combination of flavors is really nice – the sweetness from the sugar, tartness from vinegar, a little salt and a hint of spice.

Refreshing Cucumber Salad


  • 1 large cucumber
  • 1/4 C rice vinegar
  • 1 t sugar
  • 1/4 t salt
  • 1 T sesame seeds, toasted
  • dash of crushed red pepper (optional)


  1. Slice the cucumber into 1/4" slices then cut the slices into quarters.
  2. In a medium bowl, combine all of the other ingredients then add the cucumber and toss. Allow this to sit for at least 30 minutes. The flavors improve the longer it sits, I will often make it the night before and let it sit all night.
