Irish Bell Pepper Eggs

If you slice a bell pepper across the width into 1/2 inch slices, they form a shamrock! I heated eggs in the center of each bell pepper slice and it made a surprising morning breakfast. What a wonderful way to make eggs and vegetables a star for a St. Patrick’s Day breakfast!

Irish Bell Pepper Eggs

Ingredients

  • eggs (as many as you have bell pepper rings)
  • green bell peppers
  • butter/ oil / as needed
  • salt pepper
  • parsley

Instructions

  1. Wash and clean out bell pepper
  2. Slice across the bell pepper to make shamrock rings
  3. Heat butter or oil in frying pan ( I used a little of both)
  4. Place bell pepper rings in pan to heat
  5. Crack eggs into center of each ring
  6. (The eggs will ooze out of the rings but you can clean them up later)
  7. Flip when one side is cooked
  8. Cook to desired texture
  9. On plate, clean up edges
  10. Sprinkle with salt, pepper, parsley
  11. Enjoy!

    What an awesome idea. Talk about thinking outside the box…. I tried it and is really great. I’ve used three different types of Bell Peppers now and I love them all. I may never eat eggs plain again… thanks for the great idea and recipe..
