Mini-Chimis

My family loves chimichangas.  They can be made with chicken, beef, pork, or just veggie. These are great to make with the wrap pack add-on.  Use the spicy wraps as your base.  If you have leftover chicken, roast, or hamburger, these are easy to assemble and have for dinner. These can also be made and frozen for  later.  They are spicy, warm, and delicious, if you are craving chimis!

Mini-Chimis

Ingredients

  • 12 wraps, spicy
  • 1 pound shredded meat - chicken, beef, or pork
  • 1 whole onion, chopped
  • 2 tomatoes, chopped
  • 2 jalapenos, finely diced - or 1 can diced green chiles
  • 1 clove garlic, finely diced
  • 1 tsp. oregano
  • 1 tsp. cinnamon
  • 1 tsp. cumin
  • 1 cup shredded cheese
  • salsa - your choice

Instructions

  1. Heat meat with all veggies and spices
  2. When meat is ready, start an assembly line
  3. Cut wraps in half, making a half-circle
  4. Warm wraps- either in microwave for 15 seconds or heat in pan with hot oil for 10 seconds
  5. If heated in hot oil, drain on paper towel for a few seconds before filling
  6. Fill wrap with heated meat mixture
  7. Add cheese and salsa
  8. Wrap
  9. Can be eaten immediately or frozen for later use.
  10. Enjoy!
