Crunchy Panko Chicken Tenders

If you love fried chicken but don’t want the grease, then try baked chicken tenders.  Baked chicken tenders are a huge hit with kids and adults of all ages! Baking the chicken instead of frying is just as tasty, healthier and easier to clean up! To simplify the process I used an egg wash mixture to coat the chicken and then Panko bread crumbs which are healthier than the regular store bought bread crumbs.  This is a great weeknight dinner with sweet potato fries and a salad.  Enjoy!

Crunchy Panko Chicken Tenders

Ingredients

  • 4 chicken breasts, cut into tenders or nuggets
  • 2 cups Panko breadcrumbs
  • 3 tsps. Lemon pepper
  • 2 tsp. cayenne
  • 2 tsp. rosemary
  • 2 tablespoons dried parsley
  • ½ cup parmesan cheese, finely shredded
  • 1 cups flour
  • 3 eggs
  • vegetable oil or non-stick spray

Instructions

  1. Heat oven to 400°
  2. Coat baking sheet with oil or non-stick spray
  3. Crack eggs into a shallow bowl and beat them with a fork
  4. In another shallow bowl, mix flour and Panko crumbs
  5. Add spices and parmesan cheese to the flour-Panko crumbs bowl and mix
  6. Dip chicken into egg
  7. Roll chicken in flour-Panko crumb mixture to coat
  8. Lay on baking sheet
  9. Bake for 20-30 minutes depending on size and thickness of tenders
  10. Turn the chicken over half-way through cooking
  11. Serve with BBQ sauce or Ranch dressing
  12. Enjoy!
