Pork Roast with Homemade BBQ Sauce, Mashed Potatoes & Celeriac

Comfort food seems to be my specialty.  Serve this with a green salad, and you have a solid home-run dinner.  The sauce is perfect for family, and is a great basic BBQ sauce that you can add to if you want to dress it up or suit your own tastes.  I got started making my own when I started getting bad MSG headaches.  It’s so simple it’s a fallback with my crockpot when I want an amazing dinner with minimal effort.

Homemade BBQ Sauce

Ingredients

  • 1 - 16 oz container Organic ketchup
  • 1/4 cup dark molasses
  • 2 tsp Chipotle Tabasco
  • 1 tsp onion powder
  • 1/4 tsp garlic powder

Instructions

  1. Combine together and then store in refrigerator or use.

Mashed Potatoes & Celeriac

Ingredients

  • 1 bag fingerling potatoes with skins (2 pounds)
  • 1 celeriac peeled
  • 1/4 cup butter
  • 1/4 cup sour cream
  • Salt & Pepper
  • Sprinkle Garlic Powder

Instructions

  1. Boil water
  2. Add washed potatoes
  3. Cube celeriac
  4. Cook on medium heat covered about 20 minutes or until cooked through
  5. Drain and replace potatoes and celeriac into the pot
  6. Add Butter
  7. Puree using an immersion blender
  8. Add sour cream
  9. Add Salt & Pepper
  10. Serve!

  • BBQ Sauce

Instructions

  1. Place pork roast in crockpot with BBQ sauce.
  2. Cook on low 10 hours or on high for 5 hours.
  3. Remove from crockpot and enjoy with mashed potatoes and celeriac.
