Goober Salad


When I got my basket and stew pack this week, I thought about how I could use these veggies and it hit me….make Goober Salad. This recipe is one of my family favorites. I decided to take this family favorite and change it up a bit to fit into MY plan of eating healthier. This recipe normally calls for the use of mayonnaise, milk and sour cream. I used Greek yogurt and some poppy seed dressing instead and it is STILL just as yummy!

Goober Salad

Ingredients

  • 3 stalks of celery chopped
  • 2 carrots julienned
  • 1 head of cauliflower broken into small pieces
  • 1 bunch of broccoli cut up into small pieces
  • ¼ cup fresh onion grated (or you can use dehydrated minced onion)
  • 1 16oz bag frozen petite peas
  • 8oz salted peanuts shelled
  • Dressing
  • ½ cup Greek yogurt (you may want to add more or less depending on taste)
  • ¼ cup Poppy seed dressing (add according to taste)
  • Pepper to taste

Instructions

  1. In a large mixing bowl, combine all the veggies and peanuts.
  2. In a small bowl, put your Greek yogurt and poppy seed dressing. Mix them together. Take a little taste of your dressing to make sure it tastes good to you. You don’t need a lot of dressing for this salad. Just enough to give it a little coating.
  3. You can serve the salad right away but, I recommend letting all the flavors blend together by refrigerating for a couple of hours. You will need to let it set a couple hours if you use dehydrated minced onions over fresh.

I am on week 3 of my 10 week journey. As of this last Monday, I have been at the gym almost every day working out. I am down a total of 11 pounds and feeling so much better. My energy level is up and I feel good about myself. I am a Facebook junkie and have been posting a lot on there about my weight loss journey. Today a friend of mine who is on a reality TV show and on her own weight loss journey sent me a message that totally made my day! In a nutshell, she has been inspired to read my posts to help boost her as we both travel on this journey. It made me smile. You never know who we might touch with our words or actions!
