Braised Celery

This is another recipe that came about because I had a lot of celery in the fridge! This is super tasty, and a great side-dish. If you don’t have (or want to use) red wine, I would suggest using cranberry juice for the sweet-tart flavor.

Braised Celery

Ingredients

  • 2 tbsp olive oil
  • 1 bunch celery
  • 2 cloves garlic, minced
  • 1/2 cup red wine
  • 1 1/2 cups vegetable or chicken stock
  • Juice of 1/2 lemon
  • Handful of chopped parsley

Instructions

  1. Wash the celery and cut into 2-inch pieces.
  2. Heat olive oil in a large pan; add celery and cook til crisp-tender, about 5 minutes.
  3. Add garlic and wine, scraping the bottom to get the bits up.
  4. Add the vegetable stock; cover. Simmer for 10-15 minutes.
  5. Remove lid and allow liquid to reduce, until there is a glossy coat on celery.
  6. Stir in lemon juice.
  7. Garnish with parsley.
  8. Add salt and pepper (if you want! It really isn't needed).
