Butternut squash is one of my favorite vegetables. There are so many ways to use it, savory or sweet. This is a fancy looking but easy way that uses puff pastry shells from the store. Add you favorite salad and you have a wonderful meal.
Super Easy Butternut Bacon Tart
Ingredients
- 1 box puff pastry shells (6)
- 4 slices bacon (cut in thirds)
- 2 tablespoons maple syrup
- 1 cup butternut squash puree
- 1 tablespoon butter (add to squash puree)
- Salt & pepper to taste
Instructions
- Preheat oven to 425
- Spray cookie sheet with baking spray
- Place shells on sheet
- Bake shells for 15 minutes
- Remove from oven and remove centers of shells
- Fill shell with squash puree
- Layer 2 strips of bacon on the shell overlapping each slice
- Place in oven and bake 20 minutes
- Remove from oven and brush with 1 tablespoon maple syrup
- Return to oven and bake for 10 minutes, or until the bacon and pastry are a deep, dark brown
- Remove from oven and brush with the rest of the maple syrup
- Salt and pepper to taste
Notes
To make squash puree cut squash in half and remove seeds. Bake in oven at 375 degrees until soft. Put in blender and blend until smooth. You can also do this in a microwave and then blend in the blender.
