Jicama Salad

Want that cool summer refreshing bite in a salad?  Open up your Valentine pack and mix up this tasty dish!  Perfect for a romantic dinner or barbecue with friends.  Here’s a quick side dish I love whipping up for a lunch all on it’s own or for a side dish with a warm dinner.

Jicama Salad

Ingredients

  • 1 jicama, peeled and thinly juliened
  • 2 red bell peppers, sliced slightly thicker than the jicama
  • 1 clamshell blackberries (whole)
  • 1 container strawberries, sliced

Instructions

  1. wash, peel and julienne the jicama into shoestring sized pieces
  2. slice red bell peppers into 1/4" strips
  3. slice strawberries lengthwise into thin pieces
  4. combine with ripe blackberries into large bowl
  5. allow flavors to marry in the refrigerator for at least an hour, preferably overnight, stirring gently to combine

    I want to pass on to everyone what a wonderful salad we made today. Used the Jicama, pineapple, blackberries, strawberries, sweet chili peppers and zest of one lemon with the pulp and some pineapple juice.
    Let me tell you too bad we do not have smell vision better yet the able to taste it. Everyone have a great day and enjoy there Sunday.
