
I love trying new recipes with winter squash! Acorn squash is a small, ribbed squash, shaped like an acorn. It is most commonly baked, but can also be micro-waved, sautéed or steamed. It may be stuffed with rice, meat or vegetable mixtures. This time I decided to try slicing, peeling, and breading it with panko crumbs. My family loved it and I hope yours will, too!
Ingredients
- 1 - 2 acorn squash, wash, slice into rounds
- 1/2 cup flour
- 1 cup panko crumbs
- 2 eggs, beaten
- 1/2 tsp. cayenne
- salt and pepper to taste
Instructions
- Preheat oven to 400 degrees
- Line a baking pan with foil
- Spray with non-stick spray
- Peel acorn squash -- this takes time but is worth the result
- Salt and pepper the squash
- In a shallow bowl, beat eggs
- In another shallow bowl or plate, mix flour, panko crumbs and cayenne
- Coat each squash ring with beaten egg
- Dip in flour and panko mix
- Put coated rings on baking sheet
- Bake for 20 minutes and turn rings
- Bake 5 minutes longer or until fork tender
- Rings will be crispy and golden when done
- Serve with salsa or Ranch dressing
- Enjoy!
