Panko Acorn Squash Rings

I love trying new recipes with winter squash!   Acorn squash is a small, ribbed squash, shaped like an acorn. It is most commonly baked, but can also be micro-waved, sautéed or steamed. It may be stuffed with rice, meat or vegetable mixtures. This time I decided to try slicing, peeling, and breading it with panko crumbs. My family loved it and I hope yours will, too!

Panko Acorn Squash Rings

Ingredients

  • 1 - 2 acorn squash, wash, slice into rounds
  • 1/2 cup flour
  • 1 cup panko crumbs
  • 2 eggs, beaten
  • 1/2 tsp. cayenne
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees
  2. Line a baking pan with foil
  3. Spray with non-stick spray
  4. Peel acorn squash -- this takes time but is worth the result
  5. Salt and pepper the squash
  6. In a shallow bowl, beat eggs
  7. In another shallow bowl or plate, mix flour, panko crumbs and cayenne
  8. Coat each squash ring with beaten egg
  9. Dip in flour and panko mix
  10. Put coated rings on baking sheet
  11. Bake for 20 minutes and turn rings
  12. Bake 5 minutes longer or until fork tender
  13. Rings will be crispy and golden when done
  14. Serve with salsa or Ranch dressing
  15. Enjoy!
