Rainbow carrots are a novelty vegetable and relatively new to the farmers markets. They do taste different from the favorite orange variety. The batch of carrots in our Bountiful Basket were wonderful! The white variety tasted relatively mild, while the purple carrots were sweeter than the orange carrots I am used to eating. I decided to roast them and feature them for our Sunday dinner. They were savory and sweet and definitely well-liked by my family. Enjoy!
Roasted Rainbow Carrots
Ingredients
- 1 bunch rainbow carrots, scrubbed and peeled
- olive oil
- salt and pepper
- thyme, dried or fresh
Instructions
- Preheat oven to 400 degrees
- Peel carrots and trim off top
- Slice from top to bottom
- Drizzle olive oil on baking sheet
- Place carrots on sheet
- Drizzle olive oil over them
- Sprinkle salt and pepper to taste on carrots
- Sprinkle thyme over top of carrots
- Bake for 25-30 minutes until carrots are tender
