My name is Carrie K and I am one of the new bloggers for Bountiful Baskets. I am excited to be joining their team and I am even more excited to be able to share with you a journey that I recently began. In my blog posts, I will be posting healthy recipes made from the wonderful fruits and vegetables that we have gotten from our weekly contributions.
About my journey, a group of ladies in my town have decided to a “Biggest Loser” challenge. I am a BIG girl! 5 feet 10 inches tall and a week ago I weighed 278.5 pounds. My weight has always been an issue since I hit my teenage years and blossomed. I am one of the many yo-yo dieters. I lose weight and gain it back, lose weight and gain back even more. I have done all kinds of diets and just haven’t been able to stick to it. I hope that by blogging about my journey and sharing with you what my challenges and successes that I may inspire someone else to make healthy changes needed in their life as well.
The first recipe I want to share with you is one of the smoothie recipes that I like to have in the mornings for my breakfast. Most all of my smoothie recipes have two of the same base ingredients (almond milk and yogurt) but are changed to fit what fruits I have in my house. I love fruit smoothies but I need to try more of the “Green” variety.
Ingredients
- ½ cup Almond milk (you can use regular milk if you want.)
- ½ cup Low-fat Yogurt (I like vanilla but should probably be using plain)
- 1 whole ripe banana
- A few chunks of frozen peaches (I use what would be the equivalent to ½ a peach)
- A handful of frozen blueberries
- 2 TBS of rolled oata
Instructions
- You can make this smoothie recipe one of two ways. The easiest is to just throw all the ingredients into the blender and blend to the consistency you like. Add more peach chunks to your smoothie if you like thick smoothies.
- I like to blend up everything but the rolled oats on high to the consistency that I want. I then add the oats and blend for about 30 seconds. I like the bulk of the rolled oats. The longer you blend the oats the finer they become and you don’t even notice they are in there.

Hey Carrie! Great name! It’s nice to see you spell it right too! I can relate to your struggle completely! Until recently, I have always struggled with my weight. Then, due to health reasons, I lost a lot. However, my daughter seems to have inherited my same struggle sadly. So this summer, before she enters high school, we are working to make healthier choices and a healthier lifestyle in efforts to slim down. So we will be right beside you cheering you on! I’m new to this site. I’m still trying to figure out how to get a basket! Lol. It’s all confusing to me for some reason. Hopefully I can figure it out! Lol. We seem to be walking the same path! I too am a yo yo dieter and just cant seem to get a grip on this. I am new to this site as of today and I am excited to get my first basket and to read your new blogs!
