I’m an eggplant addict. I pretty much like it in anything. I also like sandwiches, but I’m kind of picky about my lunch meat – and honestly… I’d rather have veggies in a sandwich over anything else. I’ve been using eggplant as my lunch meat for around two years now, and {almost} everyone in my family likes it. I use this in place of lunch meat, but it also makes a good addition to lunch meat, as well. I’m an equal opportunity sandwich maker. 😉
Roasted Eggplant Lunch “Meat”
Ingredients
- 1 (or more) eggplants, sliced lengthwise into 1/4" slices
- olive oil
- salt
- pepper
Instructions
- Brush both sides of eggplant with olive oil.
- Sprinkle with salt and pepper.
- Roast in a preheated 375°F oven for approximately 15 minutes.
- Remove from oven and place on cooling rack.
- Store in refrigerator for sandwich making up to 5 days.

I love putting it on a whole wheat sub bun with roasted red peppers and muenster cheese! Simple but tasty.
What do you for the rest of the sandwich? This sounds really yummy!
“Normal” stuff, lol. Right now I’m in wrap mode, so I use a wrap, eggplant, harissa sauce, lettuce, tomatoes, onions. Super yummy!
