Roasted Eggplant Lunch “Meat”



 

I’m an eggplant addict. I pretty much like it in anything. I also like sandwiches, but I’m kind of picky about my lunch meat – and honestly… I’d rather have veggies in a sandwich over anything else. I’ve been using eggplant as my lunch meat for around two years now, and {almost} everyone in my family likes it. I use this in place of lunch meat, but it also makes a good addition to lunch meat, as well. I’m an equal opportunity sandwich maker. 😉

Roasted Eggplant Lunch “Meat”

Prep Time: 10 minutes

Cook Time: 15 minutes

25 minutes

Ingredients

  • 1 (or more) eggplants, sliced lengthwise into 1/4" slices
  • olive oil
  • salt
  • pepper

Instructions

  1. Brush both sides of eggplant with olive oil.
  2. Sprinkle with salt and pepper.
  3. Roast in a preheated 375°F oven for approximately 15 minutes.
  4. Remove from oven and place on cooling rack.
  5. Store in refrigerator for sandwich making up to 5 days.

Notes

Freezes great!

  1. I love putting it on a whole wheat sub bun with roasted red peppers and muenster cheese! Simple but tasty.

  2. What do you for the rest of the sandwich? This sounds really yummy!

    • “Normal” stuff, lol. Right now I’m in wrap mode, so I use a wrap, eggplant, harissa sauce, lettuce, tomatoes, onions. Super yummy!
