Roasted Eggplant Lunch “Meat”

I’m an eggplant addict. I pretty much like it in anything. I also like sandwiches, but I’m kind of picky about my lunch meat – and honestly… I’d rather have veggies in a sandwich over anything else. I’ve been using eggplant as my lunch meat for around two years now, and {almost} everyone in my family likes it. I use this in place of lunch meat, but it also makes a good addition to lunch meat, as well. I’m an equal opportunity sandwich maker. ;)

“Normal” stuff, lol. Right now I’m in wrap mode, so I use a wrap, eggplant, harissa sauce, lettuce, tomatoes, onions. Super yummy!

What do you for the rest of the sandwich? This sounds really yummy!
