I am a Pinterest junkie! Why am I telling you this? Well let me tell you, I did a little trading this last weekend after I went to volunteer at one of the local BBFC sites. (I just love volunteering for BBFC! You meet so many wonderful people!) Anyway, one of the gals that I have become friends with wished that she had gotten some of the baking potatoes like I did and I was wishing I had contributed for the beautiful strawberries like she did. Well, one thing lead to another and we were splitting up my potatoes and her strawberries. We each left as happy campers!
Now comes the big question…What to do with these beautiful strawberries I was so lucky to get? When in doubt, go to Pinterest and see what others are doing! I have found a couple yummy recipes so today as I am trapped in my house with my kids and hubby due to the ice and snow outside, I just happened to have all the ingredients to make these tasty strawberry cheesecake muffins. I don’t know who came up with the recipe. If you have ever been on Pinterest, you know that one link will lead you to another and then to another and when you finally get to the recipe you never know where you landed. That is what happened to me.
Making up these muffins gave me an excuse not only to bake something other then cookies but to take some “before and after” pictures for my weekly photo challenge group that I am in. I love when I can get two things done at one time. Makes me a happy camper!
Ingredients
- 2 cup Flour
- 1/2 cup Sugar
- 2 tsp Baking Powder
- 1 Egg
- 1/4 cup Vegetable Oil
- 1 cup Milk
- 1 tsp Vanilla
- 2 cups chopped Strawberries
- 4 oz Cream Cheese
- 1/2 cup Sugar
- 1/2 beaten egg
- 1 tsp Vanilla
- 1/4 cup Flour
- 1/4 cup Sugar
- 1 tsp Cinnamon
- 3 tbsp Butter
Instructions
- Preheat oven to 400.
- Line a 12 cup muffin pan with cupcake liners or spray with non-stick spray.
- Combine 2 cups flour, 2 tsp baking powder and 1/2 tsp salt in a bowl and mix well.
- Beat together 1 cup milk, 1/4 cup oil, egg and 1/2 cup sugar in another bowl.
- Add flour mixture to milk mixture just until well combined. Do not over mix.
- In another bowl, cream together the filling ingredients until smooth,
- In another bowl, mix together the dry topping ingredients, then cut in the butter with a fork until you get a grainy mixture.
- In each liner, put a tablespoon of the muffin batter then a few strawberry pieces, then a half tablespoon of the filling, about a half tablespoon of topping, another layer of batter then fruit and finally remaining topping.
- Bake for 25 minutes or until toothpick inserted in middle comes out clean.
- Let cool in the muffin tin for 5 minutes and then transfer cooling rack
