Turkey Veggie Noodle Soup

What to do with the leftover turkey from the holidays?  What to do with the leftover veggies in the fridge? Soup! This is my go-to recipe whenever anyone is sick in my family. Soup fills you with warmth and good vitamins. I hope you will enjoy this simple, but enjoyable soup recipe.

Turkey Veggie Noodle Soup


  • 1 quart turkey or chicken broth
  • 1 -2 cups cubed turkey (leftover)
  • OR 1-2 cups leftover chicken, cubed
  • 3 stalks celery, finely diced
  • 3 carrots, finely diced
  • 1/2 onion, diced
  • 1 tablespoon parsley
  • 1 teaspoon tarragon
  • 1 teaspoon thyme
  • 1 teaspoon pepper
  • 1 teaspoon turmeric
  • 2 tablespoons flour
  • salt to taste
  • 1/2 package egg noodles


  1. Boil broth in large pan with celery, onions, carrots
  2. Add 2 cups water
  3. Add cubed turkey or chicken
  4. Add noodles and spices
  5. Bring to boil until noodles are cooked through
  6. In small bowl, put flour and mix some of the hot broth with it until smooth
  7. Add flour mixture to soup and stir in
  8. Serve in bowls with bread or crackers
  9. Breathe in the herbal fragrance and warmth
  10. Enjoy!
