What to do with the leftover turkey from the holidays? What to do with the leftover veggies in the fridge? Soup! This is my go-to recipe whenever anyone is sick in my family. Soup fills you with warmth and good vitamins. I hope you will enjoy this simple, but enjoyable soup recipe.
Turkey Veggie Noodle Soup
Ingredients
- 1 quart turkey or chicken broth
- 1 -2 cups cubed turkey (leftover)
- OR 1-2 cups leftover chicken, cubed
- 3 stalks celery, finely diced
- 3 carrots, finely diced
- 1/2 onion, diced
- 1 tablespoon parsley
- 1 teaspoon tarragon
- 1 teaspoon thyme
- 1 teaspoon pepper
- 1 teaspoon turmeric
- 2 tablespoons flour
- salt to taste
- 1/2 package egg noodles
Instructions
- Boil broth in large pan with celery, onions, carrots
- Add 2 cups water
- Add cubed turkey or chicken
- Add noodles and spices
- Bring to boil until noodles are cooked through
- In small bowl, put flour and mix some of the hot broth with it until smooth
- Add flour mixture to soup and stir in
- Serve in bowls with bread or crackers
- Breathe in the herbal fragrance and warmth
- Enjoy!
