I love fennel. When I saw fennel in the Bountiful Basket this week, I was so happy! I used to go to a restaurant because the Citrus Salad with fennel and basil vinaigrette were wonderful. The restaurant closed and I had to make my own salad. Fennel is crisp with a hint of licorice and balances so well with the tartness of the grapefruit. The citrus basil vinaigrette adds to the flavor elements. This is the recipe I developed and I hope you will enjoy it, too!
Grapefruit Fennel Salad with Citrus Basil Vinaigrette
Ingredients
- 1 grapefruit, peeled, sliced
- 1 bunch of green lettuce, washed, cut into bite sized pieces
- 1/2 red onion, thinly sliced
- 1 fennel bulb, washed, sliced thinly
- 1 /2 cup chopped basil
- 1/4 cup red onion, diced
- 1/2 tsp salt
- 1 tsp sugar
- 1/4 cup grapefruit juice
- 1/4 cup olive oil
Salad
Citrus Basil Vinaigrette
Instructions
- Place cut up lettuce leaves in bowl
- Add sliced onion
- Add sliced fennel
- Add slices of grapefruit
- Toss salad
- Put vinaigrette ingredients in blender
- Pulse until blended
- Serve salad and add vinaigrette dressing
