Shaved Summer Squash Salad

I love to take advantage of summer squash while it is in abundance in our baskets, at farmer’s markets or from friends who are eager to get rid of their bumper crop.  Wherever you are getting your summer squash fix, they are perfect for blending with other ingredients or in very simple preparations because of their subtle flavor.

This salad is perfect on a hot evening when a cheesy or fried squash dish just won’t do.

Asian Spaghetti Squash Salad

Spaghetti squash is a very versatile vegetable.  It can be used as a nutritious substitute for any pasta.  For our family weekend barbecue, I decided to make a pasta salad.  I used spaghetti squash as the pasta in my recipe for Asian Salad.  It was a family favorite!

Asian Spaghetti Squash Salad


  • 1 spaghetti squash
  • 1/2 head cabbage, shredded
  • 1/2 head lettuce, torn into bite sized pieces
  • 1 red bell pepper, sliced, diced
  • 1 summer squash, sliced diced
  • 1/2 onion, finely diced
  • 1 clove garlic, finely diced
  • 1 lime, juiced
  • 1/2 cup olive oil
  • 1/2 cup rice wine vinegar
  • 2 tablespoons soy sauce
  • 1/4 cup brown sugar
  • 1 tblsp sesame oil
  • 1 tablespoon ginger root, finely grated
  • 1/2 cup peanuts


  1. Pierce spaghetti squash and microwave for 10 minutes
  2. When cool, slice open and remove seeds
  3. Shred spaghetti inside the squash with a fork into a bowl
  4. Discard outer spaghetti squash shell
  5. Let cool and then add other ingredients
  6. Add cabbage, lettuce, diced red bell pepper, onion, and squash
  7. Stir together
  8. Now make the dressing!
  9. In a small bowl mix together the olive oil and vinegar
  10. Add soy sauce and sesame oil
  11. Add brown sugar and grated ginger root and garlic
  12. Add lime juice
  13. Stir until mixed well
  14. Drizzle dressing over the spaghetti squash salad mixture
  15. Toss the salad and sprinkle the peanuts over the top
  16. Serve and enjoy!

Veggie scramble

I really need a protein rich breakfast to get my day started. One of the easiest and healthiest protein breakfasts is for me to scramble up some eggs. This is a great recipe to use up a variety of vegetables and it is fast so it is perfect for weekday mornings. I will pretty much use whatever I have on hand but some of my favorites are tomatoes, spinach, kale, onion, broccoli, carrots, summer squash, zucchini, herbs, leeks, and potatoes. Squash & Potato Gratin

I really wanted to transform my summer squash into a simple vegetarian meal.  The way this turned out exceeded my expectations.  My family and I were impressed by how delicious it was.  This gratin would also be a delicious side for a summer or fall meal.  Take a look at that cheesy, squashy goodness.

Summer Squash Supreme

I told Sally that I’d be providing the “Manly Produce Perspective” on the blog since I’m one of the two male VACs (Volunteer Area Coordinators).  I do love to cook but I have to admit that before I met my awesome wife, who happens to be an incredible cook, I like many men used cooking as a way to impress.  I suppose I still do.
