There is nothing more comforting than Irish Shepherd’s Pie. This traditional Irish recipe has been handed down for generations in our family. We make this dish year round but it is a great recipe for St. Patrick’s Day instead of corned beef and cabbage. It is commonly made with ground lamb but you can use ground turkey or beef instead. So…. about a year ago the big joke in my office (ok, one of them) was that we should all stock up on Spam for the zombie apocalypse. Spam…. hmmm…. isn’t that from a Hawaiian pig? You guessed it. Here’s a fun festive little dish I use when cleaning out my fridge after Bountiful Baskets. It’s just two of us, so I don’t necessarily go through as much of the food as we should as quickly as we should. I love how pretty this is sitting on the table…. and even more than that I love how it looks like a rainbow when I take it to work for lunch all chilled and cool the next morning. Pizza and a movie…seems so simple right? Where do I start? My refrigerator of course! I have Gala and Granny Smith apples from the last couple lunch box packs, lots of cheese (I think we could open a cheese shop), and a nub of fresh ginger from my last juice pack… Oh, I have a recipe for apple rhubarb chutney and I have rhubarb in the freezer (Spring rhubarb add-on). Sounds like the beginnings of a Fall inspired Pizza, and when I think of Fall I think of my childhood, which was spent in Europe (Father was in the Army). We spent many weekends touring around Europe in our old VW bus, seeing castles, farms, and beautiful English estates; this movie is my Fall “go to”!

Watching a good movie while enjoying a homemade pizza is a common occurrence in our house and since no picky eating is allowed it’s easy to try different toppings with success.
One of our favorite movies is Secondhand Lions. It’s the story of a young boy who gets uprooted to live with relatives he doesn’t know and the adventures that follow. Since this movie takes place in Texas and because we’re in Texas it made sense to create a pizza using leftover brisket. After all, there is nothing like Texas brisket! Hope you enjoy the movie and the pizza as much as we did.
Delightful, Tasty, Healthy Extra Virgin Olive Oil
Try to taste this in your mind—a nice, hot baguette (French bread), fresh out of the oven, is brought to you with a small dipping bowl of Extra Virgin Olive Oil, sprinkled with some fresh herbs. You tear off a piece of the piping hot bread, dip in in the oil and herbs, and then slowly bring it to your mouth. The oil and herbs bring an explosion of flavor to your mouth as you carefully savor and chew each bite. Even after you have swallowed, the residual after-taste is lingering and divine!
