There is nothing more comforting than Irish Shepherd’s Pie. This traditional Irish recipe has been handed down for generations in our family. We make this dish year round but it is a great recipe for St. Patrick’s Day instead of corned beef and cabbage. It is commonly made with ground lamb but you can use ground turkey or beef instead. It is a wonderful way to add some vegetables to your dinner. You can top it off with leftover mashed potatoes or Colcannon. True comfort food with warmth, heartiness, and love!
Irish Shepherd’s Pie
Ingredients
- 1 lb ground beef, turkey, or lamb
- 1 large onion, finely diced
- 3 -4 large carrots, finely diced
- 1 tsp. thyme
- 1 tablespoon butter
- 1/2 cup red wine
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 cup beef stock
- 1-2 cloves minced garlic
- salt and pepper to taste
- Parsley
- olive oil
- About 3-4 cups mashed potatoes (fresh or leftover)
Instructions
- Heat oven to 400 degrees
- Coat frying pan with olive oil
- Saute onions, carrots until fork tender
- Add ground meat and brown
- Add thyme, salt, pepper to taste
- Add garlic and cook until tender
- Add tomato paste and stir in with beef broth and wine
- Simmer
- Pour into greased glass baking pan
- Spread mashed potatoes over the top of meat mixture
- Sprinkle parsley over the top
- Bake for 20 minutes
- Serve hot with butter or beef gravy on the side
- Enjoy!
