After School Snacks

If your kids (especially the teen set) are anything like mine, they have one thought when they walk through the door after school…food. They cannot be compelled to share tales of their day, prepare for evening activities, or certainly start on homework until the growling stomachs that have been functioning on the brink of starvation since lunch are satisfied. Led by their empty guts and parched throats the newly returned scholars begin a systematic search of the kitchen cupboards, fridge, and freezer pulling out just about anything crunchy, sugary, salty, or wet.

What’s in the Bento box?

Now that school has started I’m back to making lunches for the kids because let’s face it cafeteria food is…well cafeteria food!  My children have never been picky eaters because we’ve never dumbed down their food.  What we eat they eat!  This ol’ gal doesn’t do multiple meals.  Because of that our kids are much more open to trying things most of their contemporaries won’t touch and quite honestly it makes my life much easier.  I do have to be honest with you though.  Our food philosophy has created borderline food snobs, but hey, worse things could happen ya know?!

Soups, Stews And Chowders

Our summer is coming to an end and I have already started dreaming of cool Fall evenings, with a brisk wind whipping up the crunchy leaves in a flurry, the autumnal colors decorating the outdoors, and a warming fire crackling in the back yard pit, sipping hot apple cider and filling our tummies with rich warm soups, stews and chowders.

Stir Fry

Friday night is refrigerator clean out time, getting ready for my goodies from Bountiful Baskets.  What can I make with all the odds and ends?

Stir Fry!

Heat up some oil in a large skillet and add in some small pieces of meat, seafood or scrambles eggs, veggies and even fruits that are cut up in bite size pieces, add some garlic, fresh ginger if you have it, a few dashes of soy sauce, salt and pepper or any other seasoning you like.

Serve it over rice or noodles.  Add some chicken or veggie stock to the leftovers for a quick soup.

Chicken Stir Fry: Chicken breast, celery, carrot, radicchio, green onion, sweet chili peppers, mushrooms, broccoli, fresh garlic and fresh ginger.

Have Basket…Will Travel

The last two years have brought about great changes in my family’s diet. We have been introduced to Bountiful Baskets which has helped us make living fruits and veggies the base of each meal. We have had three out of six of us diagnosed with celiac disease requiring a gluten-free lifestyle. Additionally we have one member of our family recently diagnosed with severe allergies to many (OK most) foods further limiting diet options. I have had moments of frustration but, for the most part, the new menus have been a fun challenge. I enjoy getting creative in the kitchen (BB certainly helps there) and we have all seen health benefits from a diet increasingly free of processed foods.

Cuckoo For CoCoNut (Oil that is)

The last two months have brought about great changes in my kitchen. We have recently discovered that many of my 7-year-old’s chronic pain issues are due to numerous, severe allergies- both food and environmental. I was already committed to having a “non-processed” pantry and she was already gluten-free so I thought I had the home-cooking lifestyle down pat. But the discovery of allergies to all grains, many fruits and vegetables, and to other basics including olive oil and raw local honey, really set my mind whirling. So much of what I thought was healthy was in fact hurting her. Though I was truly grateful to finally get some answers for my girl I felt depressed, overwhelmed, and totally ill equipped for the task at hand. But, being a somewhat plucky, hard-to-keep-down kind of gal, I quickly got over my pity party and did the best thing I could do. I started to research and started to get into the kitchen and experiment.

Curried

Just east of the dazzling Las Vegas strip is one of hubby’s and my favorite date spots. It’s one of those tiny, quiet, unassuming little places located in the middle of a neighborhood that has me clutch my pocketbook and cling to my honey’s arm just a little tighter (in my experience this is a recipe for a great place to eat). The outside is deceptively simple but every time we step through the door we are immediately transported to the exotic nation of India. As I enter I am drawn in by the impeccable decor, soft lighting, intoxicating smells, and absolutely flawless service from native waiters who are always willing to laugh at my attempt at their Indian language, and are often shocked by my request for the “hottest” level of food. While we order our stand-by favorites like Saag Paneer, Dal Makhani, and of course Chicken Tikka Masala, the servers are never slow to suggest more adventurous dishes and we take their suggestions whenever possible.
