Eclectic Eggplant

Comfort food can be healthy. I admit, I love ground beef. I could use it in a hundred dishes and each one is different and homey and just yummy to me. I can’t even explain why other than possibly it wasn’t something we had much growing up? Maybe it’s like my Kraft Mac and Cheese obsession; it’s something I love because we didn’t buy a lot of boxed foods growing up. Any time I think “comfort food” I immediately think mac and cheese, rice and ground beef.

The Italian pack add-on has many vegetables and herbs that can be used to make a wonderful ratatouille. When you open the herb package that is included, the scent of Italian herbs makes you think of pasta and sauces.  Looking for healthy vegetable centered dishes, ratatouille is a dish that can make a great dinner!

Italian Pack Inspiration

One of my favorite add-on’s to contribute for it the Italian pack.  I use almost everything it contains in my daily cooking and have even added some ingredients to my cooking pantry.  It was the reason I tried Eggplant Parmesan and my 5 year-old son fell in love with the eggplant.  He forgot about the pasta and sauce and ate the eggplant all by itself!

Using The Entire Italian Pack

Looking at the beautiful colors in this pack this morning, I am not having any trouble getting inspired.  Once again I am getting out of my usual rut of making the same ol’ same ol’ stuff.

Italian pack: garlic, basil, oregano, rosemary, yellow summer squash, zucchini, red onion, yellow onion, flat leaf parsley and button mushrooms.
