Cream of Root Vegetable Soup

This week we went from a beautiful 80° day on Sunday to chilly, windy fall weather on Monday. And fall weather totally calls for soup. I’ve been hoarding the root vegetables that have been in my baskets the last couple of week and decided this was the time for a soup creation to go along with the weather.

When Joann suggested the idea of a collaborative Pizza & a Movie post, I got really excited. We eat pizza on a pretty regular basis, and getting the family together to watch a movie is one of the best ways to get the busy teenager in my house to actually interact with the rest of us. I chose Forrest Gump because it seems like the adults in the house quote it all the time, and the teen in the house has never seen it.

We’ve had an amazing couple of weeks with Hatch Green Chiles available, and we’ve been in chile heaven here. The majority of the chiles will be Enchilada Sauce, but we’ve been using them in other applications, too, like breakfast burritos, stews, and these patty melts.

Summer Veggie Pasta

Summer Veggie Pasta


  • 1 lb penne pasta
  • 1 tbsp olive oil
  • 1 medium zucchini, chopped
  • 2 cobs of corn, shucked and kernals cut off
  • 1 bunch of kale, cleaned and chopped
  • 1 bunch of spinach, cleaned and chopped
  • 1/2 cup cream
  • 1 tsp greek seasoning
  • 1/2 tsp pepper
  • 1/2 cup parmesan cheese
  • 1 small red onion, chopped
  • 2 medium tomatoes, chopped


  1. Cook pasta according to package directions.
  2. Saute corn and zucchini in olive oil over medium heat 3-5 minutes.
  3. Add kale and spinach, cover, until greens wilt.
  4. Stir and add cream, pepper, and greek seasoning. Continue to cook until cream is reduced and thickened.
  5. Stir in parmesan cheese until melted.
  6. Remove from heat and add pasta, tomatoes, and onion.
  7. Enjoy!
