Chicken Saltimbocca

One of my favorite things that I have ever gotten at an Italian restaurant was Chicken Saltimboca (from Bucca Di Peppo’s). This is not a restaurant that we can go to all the time. They are EXPENSIVE! I set out to remake the chicken that I order every time. Numerous attempts later (and the addition of some awesome chicken from the latest protein drop), I think I’ve found a pretty close duplicate. Saltimbocca literally translates to “jump in the mouth” and that is what this chicken does!

French Onion Soup

SB Canning has some of my favorite ideas for canning the sometimes over abundance of veggies that I get from Bountiful Baskets. This month, I seem to be overrun with onions. Onions, onions everywhere! I Last night I decided I wanted some nice warm soup for our cold windy day. I always have way too much (considering no-one else in my family eats French onion soup), so I went searching for a canning safe version. And boy did I luck out! I took this recipe directly from SB Canning. (She is a master food preserver, and only shares safe canning ideas).

Asparagus and Sardine Pasta

Did you luck out with a case of asparagus last week? I was lucky enough to share a case with a friend. I’ve got Asparagus coming out my ears…Here is one way that I used some this week.

I started out following Gordon Ramsay’s recipe for a rustic pasta sauce that included anchovies. Well, I didn’t have any anchovies, but I did have sardines. Earlier in the day, I had canned a bunch of asparagus, and had some inch long pieces that didn’t quite fit in my jars. So, I decided to take Gordon’s basic recipe and modify it for what I had on hand in my kitchen.

Grilled Chicken with Spinach Pesto

Spinach seems to be the theme of my month! I love when spinach is in season. It is one veggie that I can always find something new to do with it. A traditional pesto is lovely with basil, and here I swapped out the basil for spinach and came out with a lovely twist on a classic dish. I hope you enjoy it as much as I did. If you do luck out and have leftovers, it reheats smashingly in the oven.

Sautéed Spinach

Hi everyone! I’m Laura and I’ve got my first recipe to share today. In this week’s basket there were 2 lovely bunches of spinach. I had a bit of green onion left over from last week and decided to combine the two for a new take on my classic sautéed spinach. I think it was a hit…But so far there has been nothing I can do to get my 3 year old to touch a piece of spinach!
