I have been wanting to eat Brussels Sprouts in a soup and I wanted to find a way to have them in without it being the main attention getter. You may not believe me this when I tell you but…Brussels Sprouts have a bad rap. I get it; they are tiny cabbage looking things and they smell funny while you cook them with an equally strong taste! But I have found that once I got past the obvious reasons for thinking I shouldn’t like them and gave them a shot I fell in love with the tiny cabbage looking thing with a funny smell! Since we started contributing for baskets, I can count on 1 hand the number of times I have used frozen vegetables while cooking. There is no need anymore! I have this beautiful bounty on a weekly basis. I love the difference it is making for my family, I feel better about the food we are eating, it is better for our health and I feel like I am making a difference in my family’s future. Banana Bread…..One of my granny’s favorites! She loved making it but I didn’t always see the value of a great piece of banana bread. Through the years, my views have broadened. It has a few things going for it. 1) It gives a little usefulness to those ripe bananas that you just didn’t get too! 2) It turns bananas into something edible for people like me who just don’t like bananas! What’s the best part of Bountiful Baskets? Is it the incredible savings that you can see adding up….Is it the healthy food it’s bringing to your home….Is it the ability to get fresh produce when before, that wasn’t an option. Those are all major reasons I continue to enjoy the Fruits of Bountiful Baskets. But, the main reason is most definitely the people involved with BB. Continue reading “Valentine’s Day Basket Cookies”
I saw the add-ons this week and my immediate thought was chocolate covered strawberries!
I am not a fan of dessert; in fact, cheesecake and I have only met once and we didn’t get along very well. It’s a shocker I’m sure; I’ve been told that statement is swearing, that I’m un-American and that I’m down right strange! <—that last one probably is true but that’s a whole new blog 😉 I make pies. LOTS of pies. But I rarely eat them. I can have ice cream in my fridge for months, weeks or ever years without even noticing it….I just don’t eat dessert. I’m a “one bite wonder” I will eat one bite of it and be done. With the exception of chocolate covered strawberries! Continue reading “Chocolate Covered Strawberry Hearts”
Most days, I look in the mirror and don’t even recognize this person I have become. I look at the old me and the person I am now and feel like they are 2 separate yet equally important parts of me. That old version showed me what I didn’t want to be. And this new one…well, this is a whole new adventure! Continue reading “Broccoli Bites”
Not going to lie….This sounds hideous (this coming from my cousin who I love for telling it like it is), even for a non picky eater which I can claim to be these days! 😉 But something about it is just darn good! What is it about this that makes it good when everything thing screams THOSE FOODS DON’T GO TOGETHER!!!! Continue reading “Sweet Brussels Sprout Bacon Bake”
I look in to those bright beautiful blue eyes and I want nothing more than for this perfect child to grow up healthy, strong and with more opportunities than I could have ever dreamed of. I want him to have a life of carefree nights filled with laughter and all the joys this life has to offer. I don’t want him to grow up just like me… I want him to be better than me. I want for him what every parent wants for their child.

This is the best sesame chicken I have ever eaten! I got the recipe from a friend and made few changes. When I make this, I feel like I’m eating at a Chinese restaurant, only this is healthy fresh ingredients and I am saving money by eating at home! I made it with the Bountiful Baskets chicken and it was so juicy! We make this in our house on a regular basis.

The things we do for the people we love!
I am a pretty simple kind of gal. I like my routines, I like the foods I like and I don’t like trying new things or making changes to my routine… until that is, I started on this food revolution/adventure I’m on. If I were asked to list 10 things to put on my toast or biscuit, Apple butter wouldn’t be one of them. I had never even heard of it before I met my husband. (Shocker, I know), I know by now, most of you think that I lived in a cave or I was grew up isolated from the world. But neither of those things are true. When it came to food, I had tunnel vision, I only ever saw the few things I knew and liked. Everything else was like a foreign country to me.
