Birthday Bacon Potato Salad

Birthday Bacon Potato Salad

Ingredients

  • 2 pounds Red or russet potatoes (I leave the skin on my red potatoes but peel the russet) cut into bite size chunks
  • 6 eggs hard boiled
  • 3 stalks of celery chopped
  • ½ onion chopped or 6 green onions chopped
  • 12 ounces of bacon sliced into little pieces and cooked. Reserving the grease from the bacon
  • Salt, Pepper and Paprika to season with
  • 1/2- 1 cup Mayonnaise

Instructions

  1. While your potatoes and eggs boil, start to cook your bacon pieces stirring frequently.
  2. Cut up the celery and onion. Place in a large mixing bowl.
  3. Once the potatoes are cooked to your desired doneness (For me, I think I boiled them for about 10-15 minutes or until fork tender) drain them and add them to the bowl of chopped celery and onion.
  4. Let the bacon cool in the grease when it is done cooking.
  5. Cool the eggs under cold water when they are done cooking. Peel and cut them up and add them to the bowl with all the other ingredients.
  6. Start with adding ½ a cup of mayonnaise to your mixing bowl of ingredients stir it gently as you mix it up. Add the bacon pieces and some of the grease to your mixture along with a little salt, pepper and paprika to your taste. If your mixture seems dry just add ¼ cup of mayonnaise at a time until you get it to the desired texted you like. I use about ¾ cups of mayonnaise and all the grease from the bacon. I wouldn’t dump all the grease in at once. Just add a little at a time and take little tastes your salad mixture to make sure it tastes good to you.
  7. Cover and let it chill in the fridge a couple hours before serving. The longer the salad sets and the flavors marinade together, the better the salad tastes to me.
In our house on your birthday you get to pick your favorite meal to have for dinner.  My husbands birthday came around the other day and I decided (not him) to make KC Strip steaks, green beans and his favorite bacon potato salad. I am not a potato salad lover but I do like this one.  I got the new picnic pack add-on  along with my conventional basket recently so, I had everything but the bacon, eggs and a couple other ingredients to make his favorite salad. The picnic pack had red potatoes and onion in it and my conventional basket had celery.  Needless to say when my hubby came into the kitchen to dish up his dinner plate, he was thrilled to see his favorite potato salad. I am sure most of you have heard of ComicCon. A convention where adults (and children) dress up in costume and do whatever they do there. I have never been to a ComicCon  and have no desire to go get my “Geek on” there but, a couple weeks ago I went on a “Mommy Vacation” without my family to get my “Geek on” at CookieCon in Salt Lake City. No, we didn’t dress up as our favorite Keebler elf or as an Oreo but we learned different techniques with decorating sugar cookies. 450 of us from 44 states and 16 Countries across the globe came to the CookieCon. We were all hopped up on sugar from royal icing! (more…)

Tasty Strawberry Cheesecake Muffins

I am a Pinterest junkie! Why am I telling you this? Well let me tell you, I did a little trading this last weekend after I went to volunteer at one of the local BBFC sites. (I just love volunteering for BBFC! You meet so many wonderful people!) Anyway, one of the gals that I have become friends with wished that she had gotten some of the baking potatoes like I did and I was wishing I had contributed for the beautiful strawberries like she did. Well, one thing lead to another and we were splitting up my potatoes and her strawberries. We each left as happy campers! (more…)

All I can say is that I am totally in love with the new California Blend pack that BBFC has been offering. If you haven’t seen one of these packs yet, you will be shocked and amazed and the size of the veggies in them! Holy Carrots Bugs Bunny, that cauliflower is as big as my head! Seriously, these packs are amazing and super easy to process to make into your own healthy blend packs for the freezer. I was blessed with a Food Saver this last Christmas but you don’t need one to make and freeze your own packs. (more…)

I think I am in LOVE! I know I am on a sugar high/rush since I haven’t had much over the last few weeks. My friend Lizabeth was talking to me the other day and I’m not sure how we got on the topic of food since we are both doing this “Biggest Losers” challenge but we did. She told that she had seen this apple nacho thing on Pinterest and told me that I needed to try it. (I think she was trying to get back at me since I am always telling her that I am going to bring her naughty baked goods from my kitchen.)

Halloween Food Fun!

I love Halloween! Next to Christmas, Halloween is my favorite holiday hands down! There are so many fun things that you can do with food at Halloween. If you are on Pinterest like I am you probably have seen this skeleton dude pictured on someone’s board. I thought he was cute and decided to try my hand out at making him. He isn’t exactly like the one on Pinterest but he still turned out cute regardless!

Fall and Comfort Food

I love the fall! I love the colors, the cooler weather, the holidays but most of all the comfort food that I can make my family on cooler nights. Over the last couple of months I have been able to vacuum pack and freeze several of the vegetables that either were in our baskets or offered as an add-on. With today being a lazy Sunday for me, I raided my deep freeze and pulled out some the vegetables that I had processed and made my family some yummy crockpot beef stew for dinner. To compliment our meal, I made some fresh French bread.

Honeyed Peaches

Growing up I remember my mom canning different fruits and veggies. Over the last few years, I have enjoyed learning how to can and make yummy salsa, jams and this year I did these super easy honeyed peaches! I love a good sweet peach and the honey added to them makes them even more divine.

Goober Salad

When I got my basket and stew pack this week, I thought about how I could use these veggies and it hit me….make Goober Salad. This recipe is one of my family favorites. I decided to take this family favorite and change it up a bit to fit into MY plan of eating healthier. This recipe normally calls for the use of mayonnaise, milk and sour cream. I used Greek yogurt and some poppy seed dressing instead and it is STILL just as yummy!
